Barbacoa and Big Red Festival

San Antonio's Barbacoa and Big Red Festival brings the city's signature pairing of slow-cooked barbacoa and Big Red cream soda together for a two-day celebration on Oct. 17-18, 2026.

Barbacoa and Big Red Festival

In San Antonio, there are food combinations that outsiders find baffling and locals find sacred, and none is more fiercely defended than barbacoa and Big Red. The pairing -- rich, fatty, slow-cooked meat wrapped in a warm tortilla, washed down with a bright red cream soda -- is a Sunday morning ritual for generations of South Texas families. Each October, the Barbacoa and Big Red Festival gathers that ritual into a single two-day celebration, bringing together the two San Antonio favorites under one roof.

The festival is built around a pairing that has deep roots in the region's food culture. Barbacoa, as it is known in Mexico, is an ancient method of cooking in which meat is steamed or roasted slowly, traditionally in a pit dug into the ground. The technique long predates the modern kitchen, and in South Texas it evolved into a weekend tradition: families rising before dawn on Sundays to collect freshly made barbacoa from local vendors, often by the pound, wrapped in foil and carried home with a stack of tortillas.

Big Red, the other half of the pairing, is a Texas invention through and through. The soft drink was created in 1937 in Waco by Grover C. Thomsen, R.H. Roark and Robert Montes, and was originally sold as Sun Tang Red Cream Soda. It was renamed Sun Tang Big Red Cream Soda in 1959, and simply Big Red in 1969 -- a change credited to Harold Jansing, then president of the San Antonio bottling plant, who reportedly heard a golf caddy refer to the soda by that name. The drink's distinctive red color and sweet, bubblegum-adjacent cream soda flavor made it a Texas staple, and its San Antonio connection helped cement its status as the city's unofficial soft drink.

Put the two together and you have something that exists almost nowhere else in the country: a combination that San Antonians treat as a birthright. The festival celebrates that pairing with plenty of barbacoa and plenty of Big Red, drawing a crowd that comes as much for the shared sense of place as for the food itself.

The event is a general-admission community festival, open to anyone who wants to eat, drink and spend a fall weekend among neighbors. It runs Saturday, Oct. 17 through Sunday, Oct. 18, 2026, in San Antonio, Texas.

For a city that has spent decades watching its food traditions get packaged and exported, the Barbacoa and Big Red Festival is a rare thing: a celebration that stays close to home. It is not a gourmet tasting menu or a chef-driven showcase. It is a plate of barbacoa, a cold Big Red, and a city that knows exactly what it likes.
